How to store spices so they stay fresh
Spices do not go off like milk, but they lose colour and smell. Heat, light, air and moisture are what take it away.
Five simple rules
- Keep the pack sealed. Press the zip shut after every use, or move the spice to an airtight glass jar.
- Keep it away from the stove. The shelf above the hob is the worst place in the kitchen; the heat and steam reach it every day.
- Keep it out of sunlight. Light fades the colour of chilli and turmeric.
- Always use a dry spoon. One wet spoon lets in moisture, and moisture brings lumps and spoilage.
- Do not refrigerate. Taking a cold jar in and out of a warm kitchen forms moisture inside it.
Powder or whole?
Whole spices keep their smell far longer than powders. That is why we sell black pepper whole: crush it just before you cook. Powders are best used within months of opening.
How long ours keep
Every Spice Charm pack carries its packing date and best-before date. Kashmiri chilli powder is best within 12 months of packing, and whole black pepper within 24 months. Coriander powder loses its aroma quickly once opened, so buy it in small packs and keep it tightly sealed.
Is it still good?
Rub a pinch between your fingers and smell it. If the smell is faint and the colour dull, it will not hurt you, but it will not flavour your food either. Time for a fresh pack.
